There are times when I feel as though I was born too late. I am the youngest sibling and, as such, grew up surrounded by the culture of the 60’s. War protests, Feeling Groovy, The Dead, and Rachel Carson were all part of my daily life. As I walked the floor today, I wanted to turn on, tune in, and drop out with some Romanesco Cauliflower. It was a far out time with the world turning on its head. I recall my brothers explaining the newest scientific breakthrough to explain the universe—the Theory of Fractals or order in randomness. Staring at the top of a head of Romanesco Cauliflower reminds me of all the groovy posters from that era. I remember all the cool, endless intertwined designs that you could trip out on. The theory has long gone but we still have the Far Out Romenesco. And these fractals taste pretty good. Roasted with Extra-Virgin Olive Oil and Sea Salt then paired with Saffron Aioli… Let the good times roll!
