 5 Fun Facts about Rhubarb

  • The color of the stalk determines the taste. The darker the red stalk, the sweeter the rhubarb!
  • It’s a member of the buckwheat family
  • 1 pound of fresh rhubarb yields about 3 cups chopped or 2 cups cooked.
  • Rhubarb was grown in China and traded for medicinal purposes as early as the 16th century.
  • The leaves attached to the Rhubarb stalk are poisonous.

This variety is hot (5,000 – 8,000 Scoville Units) and can be used as substitutes for Jalapeno to add a different color and flavor to salsas and recipes. When you roast these, it enhances the flavor. On a grill or skillet, roast these at med/high heat for 8-10 minutes

Market Update

Lettuce (Iceberg): Yuma’s growing season is winding down. However, supplies and quality remain above average. Post-harvest quality issues are minimal. 

Lettuce Leaf: Similar to Iceberg, supplies, and quality is very good. As Yuma’s season comes to an end, Huron Valley California harvest is expected to begin in three weeks.

Asparagus: Mexico’s harvest continues to be plentiful on all sizes. Pricing and quality are excellent.

Eggplant: Excellent quality and availability of all grades and sizes.
